Ingredients
- 1 cup lentils, soaked overnight

- 1/2 tsp turmeric powder
- 1 tsp red chilli powder (adjust to taste)

- 2 tbsp fresh coriander, chopped
- 1/2 cup breadcrumbs
- 2-3 tbsp oil (for greasing the air fryer)
Instructions
- Preparation: Begin by draining the soaked lentils and transferring them to a food processor. Pulse until you get a coarse paste.
- Sauté the Aromatics: In a pan, heat a little oil and add cumin seeds. Once they start to splutter, add the chopped onion, garlic, and ginger. Sauté until the onion is translucent.
- Mix the Ingredients: Add the lentil paste to the pan along with coriander powder, turmeric powder, red chilli powder, and salt. Cook for about 5 minutes.
- Form the Mixture: In a large bowl, combine the cooked lentil mixture with mashed potatoes, and mix well. Add fresh coriander and mix again.
- Shape the Croquettes: Divide the mixture into equal portions and shape each into oval or round patties, then coat with breadcrumbs.
- Prepare the Air Fryer: Preheat your air fryer to 200°C (392°F). Lightly brush or spray the croquettes with oil.
- Air Fry the Croquettes: Place the croquettes in the air fryer basket, ensuring they are not overcrowded. Air fry for 10-12 minutes or until they are golden and crispy. Turn halfway through the cooking time.
