Rosemary and Chive Scones

Why Use an Air Fryer?

Air fryers have revolutionised the way we cook, offering a quick and convenient method to achieve that desired crispiness in baked goods. For scones, this means less oil and fat without compromising on texture and flavour, ultimately leading to a healthier treat.

Air Fryer

Ingredients

  • 225g of self-raising flour
  • 1/2 teaspoon of baking powder
  • 50g of cold unsalted butter, cubed
  • 150ml of milk (plus extra for glazing)
  • 1 tablespoon of chopped fresh rosemary
  • 1 tablespoon of chopped fresh chives
  • Pinch of salt
  • A sprinkle of ground black pepper

Ensure your herbs are fresh, as this greatly enhances the flavour of the scones. If you’re unable to find fresh rosemary or chives, dried versions can be used in smaller quantities.

Instructions

  1. Preheat your air fryer to 180°C.
  2. In a large mixing bowl, combine the flour, baking powder, and salt.
  3. Add the cold butter cubes and rub them into the flour using your fingertips until the mixture resembles fine breadcrumbs.
  4. Stir in the chopped rosemary and chives.
  5. Gradually add milk, stirring with a knife to form a soft dough.
  6. Transfer the dough onto a lightly floured surface and knead gently.
  7. Roll out the dough to about 2.5 cm thick and cut out rounds using a biscuit cutter.
  8. Place the scones on a baking tray lined with parchment paper, and brush the tops with milk.
  9. Carefully place the parchment with scones in the air fryer basket.
  10. Air fry for 10-12 minutes until risen and lightly golden.

Once done, allow the scones to cool before serving with your favourite tea or a spread of compound butter for an enhanced flavour experience.
