Bubble and Squeak Croquettes
Bubble and squeak is a classic British dish traditionally enjoyed as a way to use up leftover vegetables. In this recipe, we’ll spice things up a bit by turning these into delightful croquettes. Ingredients
- 300g leftover mashed potatoes
- 150g cooked cabbage (or any leafy greens like kale or Brussels sprouts)
- 50g cooked carrots, diced

- 1 tablespoon plain flour
- 1 egg, beaten
- 75g breadcrumbs
- Salt and black pepper, to taste

Instructions
Follow these steps to make the most scrumptious bubble and squeak croquettes:
1. Prepare the Vegetables
If you haven’t got leftover vegetables, simply cook and mash the potatoes, boil or steam the cabbage, and cook the carrots by boiling or microwaving until tender.
2. Mix the Ingredients
In a large bowl, combine the mashed potatoes, cooked cabbage, carrots, and chopped onion. Season the mixture well with salt and black pepper. Stir these ingredients together until they are well mixed.
3. Shape the Croquettes
With clean hands, take a small amount of the mixture and form it into croquette shapes (around 5cm long). Ensure they are compressed well to hold their shape.
4. Coat the Croquettes
Place the flour on a plate, and roll each croquette in it, shaking off any excess. Then, dip the croquettes in the beaten egg and lastly, roll them in the breadcrumbs until completely covered.
5. Air Fry the Croquettes
Preheat your air fryer to 200°C (390°F). Coat the croquettes with a light spray of oil to ensure they get crispy. Arrange the croquettes in a single layer in your air fryer basket, ensuring they aren’t touching each other. You might have to do this in batches depending on the size of your air fryer. Cook for 10-12 minutes or until they’re golden and crispy, turning halfway through the cooking time.

Once cooked, allow the croquettes to rest for a minute before serving. These are perfect with a dipping sauce like a spicy mayo or classic ketchup.
