Ingredients
- 500g wild mushrooms (e.g., chanterelle, oyster, shiitake)
- 2 tablespoons olive oil
- 1 onion, finely chopped

- 1 tablespoon flour
- 100ml vegetable stock
- 1 sheet puff pastry (ready-rolled)
- 1 egg, beaten for egg wash
Instructions
- Prepare the Mushrooms: Clean and roughly chop the wild mushrooms. In a large frying pan, heat olive oil over medium heat. Add onion and garlic, sautéing until the onion is translucent.
- Add Mushrooms and Thyme: Add mushrooms to the pan and cook until they have released their moisture and begin to brown, approximately 8 minutes. Stir in fresh thyme, salt, and pepper.
- Make the Filling: Sprinkle flour over the mushrooms and stir well to coat. Pour in vegetable stock and allow to simmer until the mixture thickens. Remove from heat and let the filling cool.
- Prepare the Puff Pastry: Preheat the air fryer to 180°C. Roll out the puff pastry and cut it into two circles—one slightly larger than the other. Place the cooled mushroom mix in the centre of the smaller circle.
- Assemble the Pithivier: Brush the edges of the pastry with egg wash, then place the larger circle over the filling. Seal the edges by pressing with a fork, and brush the entire surface with egg wash for a golden finish.
- Air Fry the Pithivier: Carefully transfer the pithivier to the air fryer basket. Cook for 20 minutes or until the pastry is puffed and golden brown.
- Cool and Serve: Allow to cool slightly before slicing and serving. Enjoy with a fresh green salad or seasonal vegetables.
