Spicy Red Lentil and Veggie Nuggets

Ingredients

  • 1 cup red lentils
  • 2 cups water
  • 1 cup grated carrots
  • 1/2 cup finely chopped spinach
  • 1/4 cup chopped spring onions
  • 2 cloves garlic, minced
  • 1 teaspoon garam masala
  • 1/2 teaspoon red chilli flakes
  • Salt to taste
  • 1/4 cup chickpea flour
  • 2 tablespoons breadcrumbs

Instructions

  1. Rinse the red lentils under cold water until the water runs clear. In a medium saucepan, add lentils and 2 cups of water. Bring to a boil, then reduce heat and simmer for about 15 minutes or until the lentils are tender and have absorbed the water.
  2. Allow the lentils to cool slightly, then transfer them to a large mixing bowl. Add grated carrots, chopped spinach, spring onions, garlic, garam masala, red chilli flakes, and salt. Mix well to combine.
  3. Stir in the chickpea flour and breadcrumbs, mixing until you achieve a dough-like consistency that will hold together when formed into nuggets.
  4. Form the mixture into small nugget shapes, sizing them to your preference, but make them uniform for even cooking.
  5. Preheat your air fryer to 180°C (350°F). Place the nuggets in a single layer in the air fryer basket, taking care not to overcrowd them.
  6. Cook for 10-12 minutes, turning halfway through, until the nuggets are golden and crisp on the outside.
  7. Remove from the air fryer and let them cool slightly before serving with your favourite dipping sauce.
