- 1/2 cup of all-purpose flour

For the Tomato Basil Sauce
- 1 can of crushed tomatoes (400g)
- 2 tablespoons of olive oil
- 2 cloves of garlic, minced
- A handful of fresh basil leaves, torn
- Salt and pepper, to taste
- A pinch of sugar, optional

- Begin by forming your arancini. Take a heaped tablespoon of the risotto or rice and shape it around a cube of mozzarella, forming a compact ball. Repeat until all the rice mixture and mozzarella are used up.
- Set up a breading station with three shallow dishes: one for the flour, one for the beaten eggs, and one for the breadcrumbs. Season the flour with a pinch of salt and pepper.
- Roll each rice ball into the flour, then dip into the beaten eggs, ensuring it's completely coated. Finally, roll it in breadcrumbs, making sure each ball is fully covered.
