Vegetarian Scotch Eggs

Scotch eggs are a traditional and indulgent treat often associated with picnic baskets and pub menus in the UK. However, if you're following a vegetarian lifestyle or just fancy trying something different, this vegetarian twist on the classic Scotch egg won't disappoint. Using a blend of mushrooms and chickpeas, this recipe provides a savoury and hearty alternative that doesn’t skimp on flavour.

Vegetarian Scotch Eggs

Ingredients

  • 4 medium eggs
  • 250g chestnut or button mushrooms, finely chopped
  • 1 can (400g) chickpeas, drained and rinsed
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 60g plain flour
  • 2 eggs, beaten
  • 200g breadcrumbs
  • Cooking spray or a small amount of oil for air frying

Instructions

  1. Begin by boiling the eggs. Place them in a pot, cover with water, bring to a boil, and then simmer for about 6 minutes for a soft-boiled center. Cool in iced water before peeling.
  2. In a frying pan, cook the chopped mushrooms, onion, and garlic over medium heat until softened and most of the moisture has evaporated.
  3. Mushroom and Chickpea Mixture
  4. Transfer the mushroom mixture to a food processor; add the rinsed chickpeas, smoked paprika, ground cumin, salt, and pepper. Pulse until combined but still slightly chunky to add texture.
  5. Divide the mixture into four portions. Flatten each portion in your hand, place a boiled egg in the center, and wrap the mixture around the egg until it's completely covered.
  6. Coat each wrapped egg in flour, dip into the beaten egg, and roll in breadcrumbs to thoroughly coat.
  7. Preheat your air fryer to 180°C (356°F). Lightly spray the Scotch eggs with cooking spray, then place them in the air fryer basket. Cook for about 15 minutes or until golden and crispy, turning halfway through to ensure even crisping.
  8. Air Fried Vegetarian Scotch Eggs

Serving Suggestions

These vegetarian Scotch eggs are perfect served warm with a simple green salad and a tangy dip like spicy ketchup or mustard mayo. For an elegant presentation, slice the eggs in half to reveal the yolk at the centre.

Why Air Fry?

Air frying is not only a healthier alternative to deep frying, removing the need for excess oil, but it also eases cleanup and speeds up cooking times. This makes it a convenient option for home cooks looking to keep their kitchens less messy while enjoying all the crispiness that makes Scotch eggs such a delight.
